The local take
It shapes the whole day, and hopping between bars in the center and Realejo is how many locals eat: fried fish and seafood, roast ham, cured meats, stews and tortilla arrive plate by plate with each round. Old taverns lined with wine barrels pour vermouth and local wines, and the crowd is often more neighbors than visitors. Up in the Albaicín, restaurants set in carmenes put their tables in gardens and on terraces facing the palace hill, while Moroccan-style teahouses and vegetarian kitchens add more variety.
For a special night, contemporary chefs turn Andalusian recipes into tasting menus. Every pick includes a note from the licensed local guide behind it, and the chips split the list into tapas, casual meals and fine dining.
