Originating in Eastern Europe, and found in countries like Poland, Ukraine, and Israel, it’s a plaited yeast-leavened dough, similar to brioche. Typically served sweet, Babka Zana does savory versions, too, as well as various shapes, and pastries, all made from babka. For example, there are rounded muffin-like Almond praline babka or Paris-Brest-shaped babka. Using high-quality ingredients, the pistachio and chocolate one is out of this world.
