The local take
Expect brick walls, hams hanging from the ceiling and menus built around Florentine steak, pasta with wild boar, ribollita and tripe. At lunch, schiacciata and panini stuffed with cured meats are often eaten standing up, while wine bars pair local salumi and cheese with a glass of Tuscan red. Across the river in the Oltrarno, the pace slows and tables move into gardens. The list also heads into the countryside around Siena, with farm restaurants cooking what they grow, village wine bars and old cafes looking out over the valleys.
A few fine dining rooms rework Tuscan recipes into tasting menus. Start with the trattorias chip for classic Florentine cooking, or switch to cafes, casual spots or fine dining, and read the local guide's note on each place.
