A popular Paris eatery, Bouillon République opened in 2021 but it feels much older. In typical Bouillon-restaurant fashion, it serves hearty, affordable fare in a warm dining room. Dishes include onion soup, escargot, and steak frites. Another popular item is Oeuf mayonnaise, which is similar to egg salad. There is lots of space inside, but it’s very popular, so there’s generally a line. Arrive early or late for a table—they’re open from noon until midnight.
