This eatery traces its roots back to 1642 when it was one of Madrid’s central inns. In 1980, it reinvented itself as a traditional Castillian restaurant. If you look closely, you’ll notice that its chairs are inscribed with the names of worldwide celebrities and VIPs. The menu’s traditional regional standout dishes are cocido stew (needs to be ordered in advance) and roasted lamb.
