Holding onto its One Michelin star award since 2024, dining at CTC Urban Gastronomy means so much more than a set course of meals. Theatrics are involved, and certain elements on the plate are not as they appear. For example, a dish arrives with a huge side “bone.” Yet, this is not a bone at all, but a mere replica, and rather, a combination of foods and ingredients to mimic an animal bone.
